Sun-Dried Tomato Chicken Kebabs

A rich Mediterranean chicken kebab with sun-dried tomatoes, garlic, Parmesan, chilli and toasted pine nuts. A brilliant option when you want something different from the usual spice marinade.

Sun-Dried Tomato Chicken Kebabs

Ingredients

  • 700g boneless chicken thighs, cut into chunks
  • 120g sun-dried tomatoes in oil
  • 2 tbsp oil from the tomato jar
  • 40g pine nuts
  • 25g Parmesan, finely grated
  • 2 garlic cloves
  • 1 red chilli, deseeded if preferred
  • 1 tbsp lemon juice
  • 1 small handful flat-leaf parsley
  • 1/2 tsp sea salt
  • 1/2 tsp black pepper
  • To Serve:
  • Warm flatbreads
  • Rocket or mixed leaves
  • Lemon wedges
  • Garlic yoghurt

Method

  1. Toast the pine nuts in a dry pan until lightly golden, then leave to cool.
  2. Add the sun-dried tomatoes, tomato oil, pine nuts, Parmesan, garlic, chilli, lemon juice, parsley, salt and pepper to a food processor.
  3. Blitz into a rough paste.
  4. Coat the chicken pieces in the paste and marinate for 30 minutes.
  5. Thread the chicken onto skewers.
  6. Cook over a hot grill, BBQ or griddle for 12 to 15 minutes, turning often.
  7. Rest for 5 minutes once cooked through.
  8. Serve with salad, flatbreads and garlic yoghurt.

Notes

This marinade is quite rich, so it works best with fresh sides like rocket, lemon, cucumber and yoghurt. Avoid adding too much extra salt because Parmesan and sun-dried tomatoes already bring plenty.
