Spiced Lamb Kebab Pittas

Ingredients

  • Ingredients:
  • 700g lamb mince
  • 1 small onion, finely grated
  • 2 garlic cloves, crushed
  • 1 tbsp grated ginger
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp smoked paprika
  • 1 tbsp chopped mint
  • 1 tbsp chopped coriander
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • For the Cucumber Herb Yoghurt:
  • 200g Greek yoghurt
  • 1/3 cucumber, grated and squeezed dry
  • 1 tbsp chopped mint
  • 1 tbsp chopped coriander
  • 1 tbsp lemon juice
  • Pinch of salt
  • To Serve:
  • 4 pittas
  • Lettuce
  • Tomato
  • Red onion
  • Pickled chillies, optional

Method

  1. Add the lamb, onion, garlic, ginger, spices, herbs, salt and pepper to a bowl.
  2. Mix well until combined.
  3. Shape into small kebabs or koftas.
  4. Chill for 30 minutes.
  5. Mix all the cucumber herb yoghurt ingredients together.
  6. Cook the kebabs on a hot grill, BBQ or griddle for 10 to 12 minutes.
  7. Warm the pittas.
  8. Fill with salad, lamb kebabs and yoghurt sauce.

Notes

Squeezing the cucumber is important. If it is too wet, the yoghurt sauce becomes thin and watery.
