- 700g lamb mince
- 1 small onion, finely grated
- 2 garlic cloves, crushed
- 1 tbsp grated ginger
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp smoked paprika
- 1 tbsp chopped mint
- 1 tbsp chopped coriander
- 1 tsp sea salt
- 1/2 tsp black pepper
- For the Cucumber Herb Yoghurt:
- 200g Greek yoghurt
- 1/3 cucumber, grated and squeezed dry
- 1 tbsp chopped mint
- 1 tbsp chopped coriander
- 1 tbsp lemon juice
- Pinch of salt
- To Serve:
- 4 pittas
- Lettuce
- Tomato
- Red onion
- Pickled chillies, optional
Method
- Add the lamb, onion, garlic, ginger, spices, herbs, salt and pepper to a bowl.
- Mix well until combined.
- Shape into small kebabs or koftas.
- Chill for 30 minutes.
- Mix all the cucumber herb yoghurt ingredients together.
- Cook the kebabs on a hot grill, BBQ or griddle for 10 to 12 minutes.
- Warm the pittas.
- Fill with salad, lamb kebabs and yoghurt sauce.
Notes
Squeezing the cucumber is important. If it is too wet, the yoghurt sauce becomes thin and watery.
