Ingredients
- 2 large cucumbers
- 1/2 tsp sea salt
- 2 tbsp roasted peanuts, roughly chopped
- 1 spring onion, finely sliced
- 1 tbsp sesame seeds
- 1 small handful coriander, chopped
- For the Dressing:
- 1 tbsp light soy sauce
- 1 tbsp rice vinegar or black rice vinegar
- 1 tsp sesame oil
- 1 tsp honey or maple syrup
- 1 garlic clove, grated
- 1 tsp grated ginger
- 1/2 tsp chilli oil, optional

Method
- Bash the cucumbers lightly with a rolling pin until cracked.
- Cut into rough bite-sized pieces.
- Toss with salt and leave for 10 minutes.
- Drain away any excess liquid.
- Mix the soy sauce, vinegar, sesame oil, honey, garlic, ginger and chilli oil.
- Pour the dressing over the cucumber.
- Add peanuts, spring onion, sesame seeds and coriander.
- Toss gently and serve straight away.
Notes
This is best served fresh so the cucumber stays crisp. It works especially well with sticky, spicy or rich kebabs because it cuts through the fat.
