Ingredients

  • 12 strawberries
  • 80g dark chocolate
  • 2 kiwis, peeled and cut into chunks
  • 2 oranges, peeled and segmented
  • 150g pineapple chunks
  • 100g blueberries
  • 100g green grapes
  • 1 tbsp desiccated coconut, optional
  • 1 tbsp chopped nuts, optional
  • To Serve:
  • Melted chocolate drizzle
  • Coconut flakes
  • Greek yoghurt or cream

Method

  1. Melt the dark chocolate gently in a bowl over simmering water or in short microwave bursts.
  2. Dip the strawberries halfway into the chocolate.
  3. Sprinkle with coconut or nuts if using.
  4. Place on baking paper and leave to set for 20 minutes.
  5. Thread kiwi, orange, pineapple, blueberries, grapes and chocolate strawberries onto skewers.
  6. Repeat the colours to create a rainbow effect.
  7. Arrange on a platter.
  8. Serve with yoghurt, cream or extra melted chocolate.

Notes

For cleaner skewers, let the chocolate set before threading the strawberries. Use firm ripe fruit so the kebabs hold their shape.
