Ingredients
- 500g pork mince
- 400g potatoes, peeled and boiled until tender
- 1 onion, finely grated
- 1 tsp cumin seeds
- 1 tsp smoked paprika
- 2 garlic cloves, crushed
- 1 tbsp chopped parsley
- 1 tsp sea salt
- 1/2 tsp black pepper
- 1 egg, optional, if needed to bind
- 1 tbsp olive oil
- To Serve:
- Flatbreads
- Lemon yoghurt
- Bean salad or green salad
- Pickled onions

Method
- Mash the cooked potatoes and leave to cool.
- Toast the cumin seeds briefly in a dry pan.
- Mix the pork mince, mashed potato, onion, cumin, paprika, garlic, parsley, salt and pepper.
- Add egg only if the mixture feels too loose.
- Shape into oval kofte or small patties.
- Chill for 20 minutes.
- Brush with olive oil.
- Grill, pan-fry or bake until browned and fully cooked through.
- Serve with flatbreads, yoghurt and salad.
Notes
The potato makes these softer and more filling than standard pork koftes. They are ideal for batch cooking and leftovers.
