Pork and Potato Kofte Kebabs

Ingredients

  • 500g pork mince
  • 400g potatoes, peeled and boiled until tender
  • 1 onion, finely grated
  • 1 tsp cumin seeds
  • 1 tsp smoked paprika
  • 2 garlic cloves, crushed
  • 1 tbsp chopped parsley
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • 1 egg, optional, if needed to bind
  • 1 tbsp olive oil
  • To Serve:
  • Flatbreads
  • Lemon yoghurt
  • Bean salad or green salad
  • Pickled onions

Method

  1. Mash the cooked potatoes and leave to cool.
  2. Toast the cumin seeds briefly in a dry pan.
  3. Mix the pork mince, mashed potato, onion, cumin, paprika, garlic, parsley, salt and pepper.
  4. Add egg only if the mixture feels too loose.
  5. Shape into oval kofte or small patties.
  6. Chill for 20 minutes.
  7. Brush with olive oil.
  8. Grill, pan-fry or bake until browned and fully cooked through.
  9. Serve with flatbreads, yoghurt and salad.

Notes

The potato makes these softer and more filling than standard pork koftes. They are ideal for batch cooking and leftovers.
