Pork Meatball Kebabs

Ingredients

  • 600g pork mince
  • 1 slice bread, soaked and squeezed dry
  • 1 garlic clove, grated
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1 tbsp chopped parsley
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • 1 red pepper, cut into chunks
  • 1 yellow pepper, cut into chunks
  • 2 red onions, cut into petals
  • 1 tbsp olive oil
  • To Serve:
  • Flatbreads
  • Tomato salad
  • Garlic yoghurt
  • Chilli sauce, optional

Method

  1. Mix the pork mince, soaked bread, garlic, paprika, oregano, parsley, salt and pepper.
  2. Shape into 16 small meatballs.
  3. Chill for 10 minutes.
  4. Thread the meatballs onto skewers with pepper and onion pieces.
  5. Brush lightly with olive oil.
  6. Cook on a BBQ, grill or in a hot oven for 12 to 15 minutes.
  7. Turn regularly until browned and cooked through.
  8. Serve with flatbreads, salad and sauce.

Notes

The soaked bread keeps the meatballs softer. Don’t make them too large or the veg will burn before the pork cooks through.
