Pistachio Lamb Kofta Wraps

Ingredients

  • 800g lamb mince
  • 60g pistachios, finely chopped
  • 2 garlic cloves, crushed
  • 1 small onion, grated
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp chilli flakes
  • 1 tbsp chopped parsley
  • 1 tbsp chopped mint
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil
  • For the Spicy Salad:
  • 1/2 red cabbage, finely shredded
  • 1 carrot, grated
  • 1 red chilli, finely sliced
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • Pinch of salt
  • To Serve:
  • 6 flatbreads
  • Natural yoghurt
  • Fresh mint
  • Lemon wedges

Method

  1. Mix the lamb mince, pistachios, garlic, onion, spices, herbs, salt and pepper.
  2. Shape the mixture into long koftas around skewers.
  3. Chill for 30 minutes.
  4. Toss the red cabbage, carrot, chilli, lemon juice, olive oil and salt to make the salad.
  5. Brush the koftas lightly with oil.
  6. Cook on a BBQ, grill or griddle for 10 to 12 minutes, turning until browned and cooked through.
  7. Warm the flatbreads.
  8. Serve the koftas in wraps with spicy salad, yoghurt, mint and lemon.

Notes

The pistachios add texture and a slightly sweet nuttiness. Chop them finely so they mix through the lamb evenly.
