Ingredients
- 800g lamb mince
- 60g pistachios, finely chopped
- 2 garlic cloves, crushed
- 1 small onion, grated
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp chilli flakes
- 1 tbsp chopped parsley
- 1 tbsp chopped mint
- 1 tsp sea salt
- 1/2 tsp black pepper
- 1 tbsp olive oil
- For the Spicy Salad:
- 1/2 red cabbage, finely shredded
- 1 carrot, grated
- 1 red chilli, finely sliced
- 1 tbsp lemon juice
- 1 tbsp olive oil
- Pinch of salt
- To Serve:
- 6 flatbreads
- Natural yoghurt
- Fresh mint
- Lemon wedges

Method
- Mix the lamb mince, pistachios, garlic, onion, spices, herbs, salt and pepper.
- Shape the mixture into long koftas around skewers.
- Chill for 30 minutes.
- Toss the red cabbage, carrot, chilli, lemon juice, olive oil and salt to make the salad.
- Brush the koftas lightly with oil.
- Cook on a BBQ, grill or griddle for 10 to 12 minutes, turning until browned and cooked through.
- Warm the flatbreads.
- Serve the koftas in wraps with spicy salad, yoghurt, mint and lemon.
Notes
The pistachios add texture and a slightly sweet nuttiness. Chop them finely so they mix through the lamb evenly.
