Peach and Halloumi BBQ Skewers

Ingredients

  • 300g halloumi, cut into cubes
  • 3 ripe peaches, stoned and cut into wedges
  • 1 red onion, cut into wedges
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp honey
  • 1 tsp dried oregano
  • 1/2 tsp chilli flakes, optional
  • 1/2 tsp black pepper
  • Small pinch of salt
  • To Serve:
  • Rocket or watercress
  • Greek yoghurt
  • Lemon wedges
  • Fresh mint
  • Flatbreads, optional

Method

  1. Add the halloumi, peach wedges and red onion to a bowl.
  2. Mix olive oil, lemon juice, honey, oregano, chilli flakes, black pepper and a small pinch of salt.
  3. Toss gently and leave for 15 minutes.
  4. Thread the halloumi, peach and onion onto skewers.
  5. BBQ or griddle for 8 to 10 minutes.
  6. Turn carefully until the halloumi is golden and the peaches are lightly charred.
  7. Serve with rocket, yoghurt, mint and lemon.
  8. Add flatbreads if serving as a main.

Notes

Use peaches that are ripe but still firm, otherwise they can collapse on the grill. Nectarines also work well.
