Ingredients
- 300g halloumi, cut into cubes
- 3 ripe peaches, stoned and cut into wedges
- 1 red onion, cut into wedges
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp honey
- 1 tsp dried oregano
- 1/2 tsp chilli flakes, optional
- 1/2 tsp black pepper
- Small pinch of salt
- To Serve:
- Rocket or watercress
- Greek yoghurt
- Lemon wedges
- Fresh mint
- Flatbreads, optional

Method
- Add the halloumi, peach wedges and red onion to a bowl.
- Mix olive oil, lemon juice, honey, oregano, chilli flakes, black pepper and a small pinch of salt.
- Toss gently and leave for 15 minutes.
- Thread the halloumi, peach and onion onto skewers.
- BBQ or griddle for 8 to 10 minutes.
- Turn carefully until the halloumi is golden and the peaches are lightly charred.
- Serve with rocket, yoghurt, mint and lemon.
- Add flatbreads if serving as a main.
Notes
Use peaches that are ripe but still firm, otherwise they can collapse on the grill. Nectarines also work well.
