Indian-style paneer and red pepper skewers with spiced yoghurt, garlic, ginger and warming spices. A brilliant vegetarian BBQ kebab with proper flavour.

Paneer and Red Pepper Skewers

Ingredients

  • 300g paneer, cut into large cubes
  • 2 red peppers, cut into chunks
  • 1 red onion, cut into wedges
  • 150g thick natural yoghurt
  • 1 tbsp lemon juice
  • 2 garlic cloves, grated
  • 1 tbsp fresh ginger, grated
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp turmeric
  • 1/2 tsp garam masala
  • 1/2 tsp Kashmiri chilli powder
  • 1 tbsp neutral oil
  • 1 tsp sea salt
  • To Serve:
  • Mint yoghurt
  • Naan or roti
  • Sliced onion
  • Lemon wedges
  • Fresh coriander

Method

  1. Mix yoghurt, lemon juice, garlic, ginger, spices, oil and salt.
  2. Add the paneer, pepper and onion.
  3. Coat gently so the paneer does not break.
  4. Cover and marinate for 2 hours.
  5. Thread the paneer and vegetables onto skewers.
  6. Cook over a hot BBQ, grill or oven grill for 8 to 10 minutes.
  7. Turn carefully until the paneer is golden at the edges.
  8. Serve with naan, mint yoghurt and lemon.

Notes

Paneer is sturdy, but it can split if handled roughly. Use wide skewers if possible and turn gently.
