Ingredients
- 300g paneer, cut into large cubes
- 2 red peppers, cut into chunks
- 1 red onion, cut into wedges
- 150g thick natural yoghurt
- 1 tbsp lemon juice
- 2 garlic cloves, grated
- 1 tbsp fresh ginger, grated
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp turmeric
- 1/2 tsp garam masala
- 1/2 tsp Kashmiri chilli powder
- 1 tbsp neutral oil
- 1 tsp sea salt
- To Serve:
- Mint yoghurt
- Naan or roti
- Sliced onion
- Lemon wedges
- Fresh coriander

Method
- Mix yoghurt, lemon juice, garlic, ginger, spices, oil and salt.
- Add the paneer, pepper and onion.
- Coat gently so the paneer does not break.
- Cover and marinate for 2 hours.
- Thread the paneer and vegetables onto skewers.
- Cook over a hot BBQ, grill or oven grill for 8 to 10 minutes.
- Turn carefully until the paneer is golden at the edges.
- Serve with naan, mint yoghurt and lemon.
Notes
Paneer is sturdy, but it can split if handled roughly. Use wide skewers if possible and turn gently.
