Ingredients
- 700g lamb mince
- 1 small onion, finely chopped
- 2 garlic cloves, crushed
- 1 tsp cumin seeds
- 1/2 tsp chilli flakes
- 1 tbsp chopped parsley
- 1 tbsp chopped mint
- 1 tbsp olive oil
- 1 tsp sea salt
- 1/2 tsp black pepper
- For the Mint Yoghurt:
- 200g Greek yoghurt
- 1 small handful mint, finely chopped
- 1 tbsp lemon juice
- 1/2 garlic clove, grated
- Pinch of salt
- To Serve:
- Warm pittas
- Cucumber
- Tomato
- Red onion
- Salad leaves

Method
- Fry the onion in a little oil for 3 to 4 minutes until soft.
- Add the garlic, cumin seeds and chilli flakes, then cook for 1 minute. Leave to cool.
- Mix the cooled onion mixture with the lamb mince, herbs, salt and pepper.
- Shape into koftas or small patties.
- Chill for 10 minutes.
- Mix the mint yoghurt ingredients together.
- Cook the koftas on a hot pan, grill or BBQ for 10 to 12 minutes, turning until browned and cooked through.
- Serve with pittas, salad and mint yoghurt.
Notes
Cooking the onion first gives the koftas a softer, sweeter flavour. For skewer-style koftas, shape the mixture around flat metal skewers.
