Ingredients
- 600g large raw prawns, peeled and deveined
- 2 tbsp neutral oil
- Juice of 1 lime
- 2 garlic cloves, grated
- 1 tbsp fresh ginger, grated
- 1 red chilli, finely chopped
- 1 tsp smoked paprika
- 1/2 tsp ground coriander
- 1/2 tsp ground cumin
- 1 tsp sea salt
- 1/2 tsp black pepper
- To Serve:
- Lime wedges
- Fresh coriander
- Grilled corn
- Jollof-style rice or flatbread
- Chilli sauce

Method
- Pat the prawns dry.
- Mix the oil, lime juice, garlic, ginger, chilli, paprika, coriander, cumin, salt and pepper.
- Coat the prawns in the marinade.
- Marinate for 30 minutes.
- Thread the prawns onto skewers.
- Grill or BBQ for 2 to 3 minutes per side until pink, lightly charred and cooked through.
- Rest for 1 minute.
- Serve with lime, coriander, corn and chilli sauce.
Notes
Prawns cook very quickly, so keep the heat high and the cooking time short. Once they curl and turn pink, they are nearly done.
