Chilli Lime Chicken Skewers

Ingredients

  • 700g chicken breast or thigh, cut into chunks
  • Zest and juice of 2 limes
  • 2 red chillies, finely chopped
  • 3 garlic cloves, crushed
  • 2 tbsp olive oil
  • 1 tsp white wine vinegar
  • 1 tsp caster sugar
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • 1 small bunch fresh coriander, chopped
  • To Serve:
  • Lime wedges
  • Coriander
  • Rice, flatbreads or salad
  • Chilli sauce, optional

Method

  1. Place the chicken in a large bowl.
  2. Add the lime zest, lime juice, chilli, garlic, olive oil, vinegar, sugar, salt, pepper and coriander.
  3. Mix well until the chicken is fully coated.
  4. Cover and marinate in the fridge for 1 hour.
  5. Thread the chicken onto skewers.
  6. Cook on a BBQ, grill or griddle for 14 to 16 minutes, turning regularly.
  7. Make sure the chicken is golden, lightly charred and cooked through.
  8. Serve with lime wedges and extra coriander

Notes

This one is great when you want a kebab that feels fresh rather than heavily spiced. It also works well with a smoky chilli mayo.
