Ingredients
- 700g chicken breast or thigh, cut into chunks
- Zest and juice of 2 limes
- 2 red chillies, finely chopped
- 3 garlic cloves, crushed
- 2 tbsp olive oil
- 1 tsp white wine vinegar
- 1 tsp caster sugar
- 1 tsp sea salt
- 1/2 tsp black pepper
- 1 small bunch fresh coriander, chopped
- To Serve:
- Lime wedges
- Coriander
- Rice, flatbreads or salad
- Chilli sauce, optional

Method
- Place the chicken in a large bowl.
- Add the lime zest, lime juice, chilli, garlic, olive oil, vinegar, sugar, salt, pepper and coriander.
- Mix well until the chicken is fully coated.
- Cover and marinate in the fridge for 1 hour.
- Thread the chicken onto skewers.
- Cook on a BBQ, grill or griddle for 14 to 16 minutes, turning regularly.
- Make sure the chicken is golden, lightly charred and cooked through.
- Serve with lime wedges and extra coriander
Notes
This one is great when you want a kebab that feels fresh rather than heavily spiced. It also works well with a smoky chilli mayo.
