Caramelised Strawberry Kebabs

Ingredients

  • 24 large strawberries, hulled
  • 200g caster sugar
  • 4 tbsp water
  • 1 tsp lemon juice
  • 1 tbsp golden syrup
  • 150g Greek yoghurt
  • 100g mascarpone
  • 1 tsp vanilla extract
  • 1 tbsp icing sugar
  • 1 tbsp crushed pistachios, optional
  • To Serve:
  • Extra strawberries
  • Mint leaves
  • Small bowl of vanilla yoghurt dip
  • Crushed pistachios or biscuit crumb

Method

  1. Pat the strawberries completely dry and thread 3 to 4 onto each skewer.
  2. Mix the yoghurt, mascarpone, vanilla and icing sugar in a bowl, then chill.
  3. Put the caster sugar, water, lemon juice and golden syrup into a small pan.
  4. Heat gently until dissolved, then boil until the caramel turns golden.
  5. Remove from the heat and carefully dip or drizzle the strawberry skewers with caramel.
  6. Place on baking paper and leave to set for 10 minutes.
  7. Sprinkle with pistachios or biscuit crumb if using.
  8. Serve with the chilled vanilla yoghurt dip.

Notes

Caramel gets extremely hot, so this is one for adults to prepare. Make sure the strawberries are dry before dipping or the caramel will not cling properly.
