Brazilian Beef Kibe Skewers

Ingredients

  • 600g minced beef
  • 100g fine bulgur wheat or couscous
  • 1 tbsp sunflower oil
  • 1 garlic clove, grated
  • 1 tsp ground cumin
  • 1/2 tsp cumin seeds
  • Zest and juice of 1 lime
  • 1 egg
  • 1 small handful parsley, chopped
  • 1 tbsp mint, chopped
  • 1 small handful coriander, chopped
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • Oil, for frying or brushing
  • To Serve:
  • Lime wedges
  • Garlic yoghurt
  • Chilli sauce
  • Salad leaves

Method

  1. Cook the bulgur or couscous according to packet instructions, then cool.
  2. Fry half the beef in a little oil until browned, then cool.
  3. Mix the raw beef, cooked beef, bulgur, garlic, cumin, lime zest, lime juice, egg, herbs, salt and pepper.
  4. Shape into small oval kebabs.
  5. Push a small wooden skewer through each one if desired.
  6. Fry in shallow oil until crisp and cooked through, or brush with oil and grill.
  7. Drain on kitchen paper if frying.
  8. Serve with lime, garlic yoghurt and chilli sauce.

Notes

These are more snack-style than wrap-style, but they make a strong beef kebab recipe for a starter section. For a lighter version, cook them in an air fryer.
