Ingredients
- 600g minced beef
- 100g fine bulgur wheat or couscous
- 1 tbsp sunflower oil
- 1 garlic clove, grated
- 1 tsp ground cumin
- 1/2 tsp cumin seeds
- Zest and juice of 1 lime
- 1 egg
- 1 small handful parsley, chopped
- 1 tbsp mint, chopped
- 1 small handful coriander, chopped
- 1 tsp sea salt
- 1/2 tsp black pepper
- Oil, for frying or brushing
- To Serve:
- Lime wedges
- Garlic yoghurt
- Chilli sauce
- Salad leaves

Method
- Cook the bulgur or couscous according to packet instructions, then cool.
- Fry half the beef in a little oil until browned, then cool.
- Mix the raw beef, cooked beef, bulgur, garlic, cumin, lime zest, lime juice, egg, herbs, salt and pepper.
- Shape into small oval kebabs.
- Push a small wooden skewer through each one if desired.
- Fry in shallow oil until crisp and cooked through, or brush with oil and grill.
- Drain on kitchen paper if frying.
- Serve with lime, garlic yoghurt and chilli sauce.
Notes
These are more snack-style than wrap-style, but they make a strong beef kebab recipe for a starter section. For a lighter version, cook them in an air fryer.
