Ingredients
- 700g rump steak or sirloin, cut into cubes
- 2 tbsp olive oil
- 1 tbsp red wine vinegar
- 2 garlic cloves, crushed
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1/2 tsp chilli flakes
- 1 tsp sea salt
- 1/2 tsp black pepper
- 1 red onion, cut into wedges
- 1 green pepper, cut into chunks
- For the Quick Herb Sauce:
- 1 small bunch parsley
- 1 small handful coriander
- 1 garlic clove
- 2 tbsp lemon juice
- 4 tbsp olive oil
- Pinch of salt
- To Serve:
- Flatbreads
- Salad leaves
- Pickled onions
- Yoghurt

Method
- Mix the olive oil, vinegar, garlic, cumin, paprika, chilli, salt and pepper.
- Add the beef cubes and coat well.
- Marinate for 1 hour.
- Thread the beef onto skewers with red onion and green pepper.
- Blitz or finely chop the herb sauce ingredients together.
- Cook the skewers over a hot BBQ, grill or griddle for 8 to 12 minutes.
- Rest for 5 minutes.
- Serve with flatbreads, salad, yoghurt and herb sauce.
Notes
This is a good base beef skewer recipe for the site because it is simple, flexible and BBQ-friendly. Keep the beef cubes even so they cook at the same speed.
